摘要

FIELD: determination of summary activity of antioxidants in objects of artificial and natural origin utilized in food, cosmetic and pharmaceutical industries and medicine. SUBSTANCE: given method can be employed to determine summary antioxidant activity of extracts of vegetable starting materials, food products, medicinal preparations and biological objects. Method includes process of reduction of substance on electrode in electrolyte solution. Electric reduction of oxygen conducted with use of mercury-film electrode against background of 0.1M Na2SO4 in aqueous medium, of 0.1M NaClO4 in ### medium or in 0.9% NaCl in biologic objects is used in the capacity of model reaction. Recording of cathode waves of single-electron reduction of oxygen is carried out under differentiation mode at rate of potential scan 50-100 mV/s and summary antioxidant activity is established by relative change of current of electric reduction of oxygen in interval of potentials from 0 to 0.6 V with reference to saturated silver chloride comparison electrode. Method requires short time for preparation of specimens, enables optimum doses of preparation to be evaluated and stability of examined specimens in time to be found. EFFECT: increased sensitivity and accuracy of method, shortened time for determination of summary activity of antioxidants. 2 tbl
