An air-powered cleaner is used in association with fish and animal de-skinning installations. The cleaner assembly has a movable beam (1) with air several jets (2) directed towards the de-skinning drum (4). The beam moves around an axis around a rotating drum (5) esp. with a guide groove (7) linked by a lever (8) to the beam. the groove (7) follows a curved profile extending from one end of the plastic drum (8) to the other. Also claimed is an animal an-skinning assembly equipped with a commensurate air cleaner and having a common drive unit for a spin drier (4) and drum (5).
