Qualitative and/or quantitative analytical determination of free fatty acids which have been obtained by oxidation of aldehydes or fatty alcohols or by saponification of suitable esters is such that the conversion to provide the free fatty acids is effected in the presence of an enzyme. Qualitative and/or quantitative analytical determination of free fatty acids of formula R-COOH (I) which have been obtained by oxidation of aldehydes or fatty alcohols or by saponification of esters of formula R-COO-R' (II) is such that the conversion to provide the free fatty acids is effected in the presence of an enzyme.
