PROBLEM TO BE SOLVED: To provide a vacuum cooling device capable of sanitarily and efficiently cooling a rice ball after molding in order to make a delicious rice ball.;SOLUTION: This vacuum cooling device comprises a plurality of cooling chambers 8 storing a matter to be cooled, pressure reduction means 9-11 connected to each cooling chamber 8 through a first valve 24 to reduce the pressure in the cooling chamber 8; a pressure restoration means 12 connected to each cooling chamber 8 through a second valve 26 to restore the pressure of the pressure-reduced cooling chamber 8 by introducing the outside air thereto; and a control means 25 controlling the first valve 24 and the second valve 26 of each cooling chamber 8 so as to be capable of performing the pressure reduction or pressure restoration for every cooling chamber 8. The matter to be cooled 7 is carried in and out of the cooling chamber 8 on a carrying plate 20 by carrying-in and -out devices 3 and 4.
