PROBLEM TO BE SOLVED: To provide powdery oil and fat having good emulsification stability after dissolved, and excellent in physical properties as powder.;SOLUTION: The powdery oil and fat contains 30-90 pts. wt. of transesterification oil, and 1-70 pts. wt. of a coating material as main ingredients. The transesterification oil is obtained by subjecting 60-95 wt.% of palm-based oil and fat having a melting point at 30-60°C, and 5-40 wt.% of a medium chain length saturated fatty acid to ester exchange, and has a melting point at 20-55°C. The coating material comprises a protein or an emulsifiable sugar. The powdery oil and fat is used to obtain food.;COPYRIGHT: (C)2005,JPO&NCIPI
