PROBLEM TO BE SOLVED: To provide a method for manufacturing a mucopolysaccharide-protein complex containing chondroitin sulfate and hyaluronic acid by using as a raw material the processing residue consisting mainly of the whole head parts of salmon/trout.;SOLUTION: The method for manufacturing a mucopolysaccharide-protein complex composition containing chondroitin sulfate and hyaluronic acid, using as a raw material the whole head parts of salmon/trout, comprises the successive processes of crashing the raw material, and then of protease treatment or alkali treatment, defatting treatment, clarifying and filtering treatment, (and if necessary) purification/concentration treatment by the membrane separation, vacuum concentration treatment, and spray-drying treatment.;COPYRIGHT: (C)2005,JPO&NCIPI
