PROBLEM TO BE SOLVED: To prepare a medium containing bean curd refuse, and having improved treatability and improved availability; and to provide a method for producing the medium, a method for culturing microorganisms by using the medium, a method for producing a useful material, and a food material containing the useful material.;SOLUTION: The medium for culturing the microorganisms is obtained by adding at least one kind selected from a protein, a peptide, an amino acid and a salt thereof to a solubilized liquid obtained by solubilizing the bean curd refuse. For example, a protein or a peptide containing glutamic acid as a constituent amino acid is used as the protein or the peptide, and glutamic acid or a salt thereof is used as the amino acid or the salt thereof. Especially preferably, a medium to which soybean milk as a protein source is added is used.
