PROBLEM TO BE SOLVED: To obtain a new protease derived from microorganisms belonging to the genus Aureobacterium, having degrading activities limited to a heat-denatured collagen and a nondenatured soluble collagen, and usable for production or the like of a gelatin and a collagen useful for a food, a cosmetic and a medicine.;SOLUTION: This protease is the new one manifesting a limited degrading activities of degrading a heat-denatured collagen having about 130,000 molecular weight, and nondenatured solubilized collagen having about 300,000 molecular weight to peptides having about 70,000 molecular weight and about 40,000 molecular weight, but manifesting slight activities of degrading a synthetic substrate of formula I (DNP is a dinitrophenyl group), which is a collagenase substrate, not manifesting activities of degrading a synthetic substrate of formula II, and having an optimum pH of 5.5-7, an optimum temperature of 37-40°C, and 23,000±2,000 molecular weight (SDS-PAGE). The protease can be used for production of a gelatin, a collagen or the like, having a specific molecular weight, and useful for a food, a cosmetic a medicine or the like.
