The mould has a non-sticking coating comprising silica. A baking mould such as a baking tin or tray is provided with a coating having a top layer comprising silica. Independent claims are also included for the following: (1) Method for producing the mould by forming the mould from a heat resistant material with good thermal conductivity (e.g. metal) and then applying a silica coating; and (2) Coating structure for a baking mould, comprising a bonding layer (e.g. carbon) and a top layer of silica.
