For production of check dessert sweet white wine "Sari-Pandas "Zolotyi Tsilytel" one uses wine materials prepared of native vine varieties grown in rigorously restricted agro-ecological region û in the water-meadow area of the river Shelen near the southern-eastern foot of the mounting Shari-Sopla in neighborhood of the village Morskoie of the Alushta vine zone of the Crimean peninsula, in following ratio: Sari-Pandas û 70 %, Kokur white û 30 %, which have achieved technical ripeness; then the vine is milled with separation of stems, the decayed and damaged berries, with filtration of the pulp obtained in prescription 75 mg/dm3, with infusion of the must on the pulp during 24 hours with periodic mixing, than the must is separated from pulp through pressing in amount not more than 70 dal per 1 t of vine; the must is fermented with following fortification, decantation from sediment is performed, with takeout of purified wine materials from the yeast deposit, with soaking with total term not more than six month, at that ripening is performed in oak containers in surface mounted premises at high enough temperature (up to 28 DEGREE C in summer), with pouring the processed wine material; in the case tendency of turbidity comes to existence one implements additional processing of wine materials to achieve stability with respect to pouring.
