The present invention discloses novel oatmeal compositions. These compositionsmay be used to provide enhanced nutrition through vitamin fortification whichcan withstand long periods of storage without any substantial degradation ofthe incorporated vitamin. The compositions comprise processed oats and atriple encapsulated vitamin C component and may further include sugar, salt,binding agent or texture modifying agent, flavorings, inclusion pieces and avitamin and mineral blend.
