The invention concerns an improved method and apparatus for the quantitative determination of the bitterness content of beer, or the process stream of beer production. The method employs UV/VIS spectroscopy to perform a direct determination of absorbance by a sample from the brewing process stream, without necessitating a sample preparation step or extraction of bitterness components. The absorbance at one or more wavelengths is used to determine bitterness content by comparison with the multivariate absorbance measurements of beers of known bitterness content by regression analysis.
