Process for controlling/regulating pressure during the cooking of food in a chamber (2) of a cooking device, especially a pressurized pan (1), comprises measuring a temperature variable using a temperature-measuring device (10-12) to obtain a temperature measurement signal that is transmitted to a control/regulating device (7). Measurement of the temperature variable consists of measuring the temperature of a liquid in the cooking chamber. An independent claim is also included for a device for cooking food, especially in a pressurized pan.
