摘要

PURPOSE: A method of making fermented soybean paste containing anaerobic microorganism by fermenting raw material for fermented soybean paste with anaerobic microorganism under vacuum condition and fermenting with steamed soybeans for 15 to 20 days in a jar is provided. The product contains microorganism beneficial to human body in large quantities and has low salinity. CONSTITUTION: A vacuum of 800 to 900torr is applied to a fermentation chamber containing a mixture of 80% by weight of soybean liquid having a moisture content of 70 to 80% and 20% by weight of fermented soybean powder. The raw material for fermented soybean paste is inoculated with anaerobic microorganism and fermented at 60 to 70deg.C for 1 to 3hr in the first stage and then at 30 to 40deg.C for 8 to 12 days in the second stage. Thereafter, 30 to 40% by weight of raw material for fermented soybean paste is mixed with 60 to 70% by weight of steamed soybeans having a moisture content of 40 to 50%, ground and then fermented for 15 to 20 days in a jar.
