PURPOSE: A gene encoding mannanase and recombinant mannanase expressed from a transformant thereof are provided, which mannanase has improved reactivity at neutral pH and medium temperature which are similar conditions within the intestine, and decomposes galactomannan into mannose, mannobiose and mannotriose. CONSTITUTION: The gene encoding mannanase has the nucleotide sequence set forth in SEQ ID NO:1. The mannanase has the amino acid sequence set forth in SEQ ID NO:2. A recombinant vector containing the nucleotide sequence of SEQ ID NO:1 has a restriction map of figure 2. A transformed Escherichia coli with the recombinant vector is provided. The method for producing mannanase comprises culturing the transformed Escherichia coli in a medium and obtaining mannanase from the cultured medium.
