Crystals of a long-chain acylglutamic acid (or a salt) give a powder X-ray diffraction analysis using Cu-Kalpha radiation with a peak at 2theta +/-3 oin the range 20.0-23.0 oand have a water content of 0.01-3.4 wt.%. Independent claims are also included for production of the crystals by (1) drying the acid or salt of water content 3.5- 20 wt.% at a temperature not higher than the corresponding phase transfer crystalline- to-amorphous temperature; or (2) drying a solution containing as much as possible of the acid or salt, treating the dried product with water so as to give a water absorption of 3.5-20 wt.% and drying of the product as per (i) above.
