The apparatus consists of a temperature-controlled container (1) for the wine, a suction pump (2), a condenser (3) with a collector (5) at the base for the condensed wine, sensors 22, 23, 24), solenoid valves (14, 15, 16), connecting tubes (11, 12, 13), a micro-bubble diffuser (26), control knobs (17, 18), taps (6, 7, 8), and an electronic regulator (29). The solenoid valves allow for the removal of air and the reintroduction of esters and other non-condensed flavors via the microbubble diffuser. An inner wall has pressure (22), temperature (23) and alcohol content (24) sensors, linked to a display (19, 20, 21) on the front of the apparatus.
