PPROBLEM TO BE SOLVED: To provide a method for producing a real dried bonito type flaked fermented seasoning material by using the bonito as a raw material and shortening its processing period. PSOLUTION: This method for producing the seasoning material is provided by performing processes in this order comprising 1. a process of cutting down the bonito, 2. a process of boiling the cut fish meat pieces, 3, a process of cooling the boiled fish meat pieces, 4. roasting the cooled fish meat pieces by 2 times, 5. a process of obtaining flaked roasted material by chopping the meat pieces to make the flaked material, 6. a process of further roasting the flaked material obtained in the process 5, 7. a process of seeding a bonito fungus on the rough dried flaked and roasted material, 8. a process of culturing the seeded flaked rough roasted and dried material and 9. a process of drying with sunlight or by heating the flaked roasted and dried material obtained by the process 8.
