PROBLEM TO BE SOLVED: To provide a method for extracting and isolating a capsinoid compound at low cost and in high efficiency from a chili pepper.;SOLUTION: The method comprises bringing a chili pepper ground product into contact with a mixed extractive solvent containing water and acetone to extract the objective capsinoid compound in the chili pepper into the mixed solvent and isolate it, wherein, for the mixed extractive solvent, the mixing molar ratio of water to acetone is set within the range of (95:5) to (0.1:99.9), and ethanol may be used instead of acetone.;COPYRIGHT: (C)2006,JPO&NCIPI
