PROBLEM TO BE SOLVED: To provide soymilk ice cream by using soymilk, rapeseed oil, sweet drink made from fermented brown rice, salt and maple syrup, having low fat, low cholesterol and low calorie, containing rich vitamins, minerals and dietary fibers, having smooth palate feeling and flavor and moderate viscosity, and delicious, safe, and orienting health without the use of a synthetic additive, and to provide a method for producing the soymilk ice cream.;SOLUTION: The subject method for producing the soymilk ice cream comprises a process of keeping soymilk at 80C and condensing the soymilk for 20-30 min while stirring without boiling up so as to greatly reduce smell peculiar to soybean and draw sweetness, and adding to the soymilk a natural raw material such as rapeseed oil and maple syrup, and sweet drink made from fermented brown rice which is produced by a peculiar method comprising cooling boiled brown rice to 70C, adding 250 g malted rice and 600 ml hot water at 55-60C to the brown rice followed by sufficiently stirring, sometimes mixing the product together in the middle in a condition of keeping warm at 55-60C and fermenting the product for 8 h.;COPYRIGHT: (C)2006,JPO&NCIPI
