Kiwifruit extract and a method for producing powdered kiwifruit extract

A method for producing a powdered kiwifruit extract is disclosed, wherein the method comprises the steps of: (a) separation of kiwifruit pericarp and pulp, (b) separation of kiwifruit seed and pulp, (c) physical and enzyme treatments on the separated pericarp, pulp and seeds, and (d) drying of the extract, wherein the enzyme may be pectinase, pectatelyase or pepsin. A quantitative analysis of the powdered kiwifruit extract describing the amount of different components in the extract is also disclosed.
