Sequential directed fermentation procedure, new strain of wine yeast CECT 11773 involved in it, and its industrial application. The present invention relates to a new strain of Pichia fermentans, CECT 11773, and to the application of a new winemaking process by means of directed sequential fermentation, whereby the must is sown at different times by said strain and by another of the genus Saccharomyces. The first results in the synthesis of a large amount of aromatic and flavoring substances with low ethanol production, which will determine the aroma of the final product; The second yeast is responsible for finishing the fermentation by increasing the amount of alcohol accumulated up to 12-13% v / v.
