The present invention is directed to flour blends whichcontain waxy wheat flour and which are suitable for thepreparation of breads, cakes, or noodles. The invention isalso directed to breads, cakes, and noodles prepared fromthe flour blend. When the flour blends of the presentinvention are used, it is possible to obtain foods which donot provide degraded texture after prolonged storage, andwhich particularly provide an excellent texture whenconsumed after being frozen and thawed.
