An assembly empties the intestine removed from slaughtered beef cattle and has a conveyer that transports the intestine through a perforating station. The conveyer advances in steps. The puncture station has a control unit that drives spikes through the intestine when the conveyer is stationary. The conveyer is a 'walking floor'. The flat thin spikes are inserted through the grid apertures. The press station contact surfaces are rough to facilitate a grip on the intestine. Also claimed is a process to expel the contents of the gut into a sump while the gut is stationary between advancement cycles.
