In a method for solidifying and shaping a mass of warm or hot liquid foodstuff by cooling a shaping element and briefly contacting the cooled element with the mass, temporary, controlled, temporary additional cooling is provided when necessary (as well as static or continuous cooling) : An independent claim is included for corresponding apparatus, including a temporary, as-needed, electronically controlled additional cooling device (20) as well as a continuously operated permanently operated cooling device (10).
