PROBLEM TO BE SOLVED: To provide a vacuum dryer for foods which enables drying with a higher drying ratio while preventing discoloration or deterioration of foods.;SOLUTION: The vacuum dryer for food is provided with the following: a drying chamber D in which foods are stored; a heating means 3 heating air in the drying chamber; a vacuum generation means 4 reducing the pressure in the drying chamber; and a control means 10 controlling of drying the heating means and the vacuum generation means, wherein the vacuum generation means includes an exhaust ventilation fan 6 exhausting the air in the drying chamber to the exterior, and an inlet-air regulation means 7 regulating an amount of the inlet air into the drying chamber. The control means detects the pressure and the temperature in the drying chamber, at least either one of the amount of the inlet air in the inlet-air regulation means or the amount of the discharged air of the exhaust ventilation fan is regulated to regulate negative-pressure power condition in the drying chamber; and the heating amount in the heating means is regulated to regulate the temperature in the drying chamber.;COPYRIGHT: (C)2007,JPO&INPIT
