PPROBLEM TO BE SOLVED: To provide a method for producing a cyclodextrin clathrate material comprising fat-soluble ginger components by which the cyclodextrin (CD) clathrate material enclosing a large amount of fat-soluble ginger components is efficiently obtained in a simple process. PSOLUTION: This method for producing the cyclodextrin clathrate material comprising fat-soluble herb components such as fat-soluble ginger components comprises adding a mixture of a ginger plant body, its processed product or a fat-soluble ginger component solution, starch, and a fat-soluble solvent to a cyclodextrin synthetic enzyme. By this method, the cyclodextrin clathrate material comprising fat-soluble herb components, and food, cosmetics or a medicine each containing the clathrate material are obtained.
