PROBLEM TO BE SOLVED: To provide a method for producing a fried boiled fish paste comprising preparing alternative raw material for producing a favorable fish paste product, and offering an effective utilization of frigate mackerel, that is, comprising using the frigate mackerel not effectively used before.;SOLUTION: The method for producing fried boiled fish paste made from frigate mackerel comprises the following processes: a meat collection process of collecting fish meat of frigate mackerel; a water-exposing process of exposing the fish meat in alkaline salt water; a draining process of pressurizing the water-exposed fish meat to drain the fish meat; a mashing-up process of adding salt and seasoning to the drained fish meat followed by mashing-up the mixture to obtain meat paste; a molding process of molding the fish paste into a prescribed shape; a preheating process of heating the meat paste molded into the prescribed shape at relatively low temperature; and a high-temperature heating process of frying the preheated fish paste with oil.;COPYRIGHT: (C)2007,JPO&INPIT
