PROBLEM TO BE SOLVED: To obtain the novel subject cold-resistant enzyme that comprises a cold- resistant catalase including a specific amino acid sequence, imparts resistance to low temperatures to plants such as rice plant by introduction of its gene and is useful in physiological decomposition of hydrogen peroxide used in bleaching or washing. SOLUTION: This is novel cold-resistant catalase including the amino acid sequence represented by the formula and can impart the resistance to low temperature (that originating from a plant intrinsically excellent to low temperature such as wheat) to rice plant by introducing the catalase gene originating from the cold-resistant plant to the rice plant. In addition, this enzyme can be used for physiological decomposition of hydrogen peroxide whose consumption is expected to increase in industrial bleaching and washing. This cold-resistant catalase is prepared by separating mRNA from seeds of wheat, preparing cDNA library using the same, screening the library with probe comprising partial DNA of the catalase gene, incorporating the catalase gene into the vector, introducing the vector into the protoplast of rice plant and extracting this enzyme from the tissue of the plant to which the catalase gene is introduced.
