PROBLEM TO BE SOLVED: To provide a method for efficiently producing powdery reduced starch syrup having a refreshing sweetness which has not conventionally existed and has excellent permeability and a reducing effect on water activity in a short time by using a reduced starch syrup as a raw material comprising sorbitol and maltitol as main components. SOLUTION: The method for producing the powdery starch syrup is characterized in that the reduced starch syrup comprising sorbitol and maltitol as main components is kneaded with a crystal mixture containing sorbitol crystal and maltitol crystal, the sorbitol and the maltitol in the reduced starch syrup are crystallized to co-crystallize the reduced starch syrup. The powdery reduced starch syrup is produced by the method.
