The present invention provides an emulsifying formulation for the preparation of improved quality cakes and a method of preparation of said emulsifying formulation. The process involves the selection of ingredients in optimized combination and preparation of the desired product with steps of mixing, melting, emulsification and adjustment of the product to a neutral pH.
