METHOD FOR DETERMINING THE COLOR INTENSITY OF BEEF WITH THE NOR, PSE OR DFD QUALITY INDICATOR BY PHOTOMETRY

The proposed method for determining the color intensity of beef with the NOR, PSE or DFD quality indicator by photometry consists in determining the optical density of the beef muscular tissue by a photometer. The reference color intensity is specified as 2.468+- 0.012 for beef with the NOR quality indicator, 2.149+- 0.009 for beef with the PSE quality indicator, and 2.733+- 0.016 for beef with the DFD quality.
