Procedure to obtain a product of dietary fiber from by-products of thistle, product obtained and use thereof. The present invention provides a process for obtaining a dietary fiber product from thistle residues, which comprises the steps of: washing the wastes, drying the washed wastes, crushing the washed and dried wastes, and grinding the crushed wastes. This basic dietary fiber product, which contains 75-85% by weight of total dietary fiber, of which 20-30% by weight is soluble fiber, can be subjected to further processing to increase the amount of soluble fiber and improve its functional and organoleptic properties. The modified fiber product thus obtained contains 80-90% by weight of total dietary fiber, of which 25-35% by weight is soluble fiber. Finally, the invention also provides the use of said products based on dietary fiber, basic or modified, to prepare fortified foods, dietary products or food supplements.
