To fillet killed and headless fish broodstock, the abdominal cavity of whichis opened up, especially the species tilapia, dorsal and ventral cuts are madeup to the backbone and cleanly cut separating cuts are made in the remainingarea attached to the backbone, while the fillets are peeled from the ribs. Theaim of the invention is to enable machines to be used for such fish, renderingextensive manual treatment superfluous. Before the fillets are peeled from theribs, the ventral folds are trimmed by a machine to remove parts which reducethe quality of the fillet, while the peeling cuts are made with two degrees offreedom in order to adapt to the particularly stiff rib profile.
