O-acylated citric, tartaric and malic anhydrides (I)-(III) are new. O-acylated citric, tartaric and malic anhydrides of formula (I)-(III) respectively are new. R = an optionally fluorinated 2-21C aliphatic group, t-butoxy, benzyloxy, t-butyl or optionally substituted phenyl or benzyl. Independent claims are also included for: (1) processes for preparing (I)-(III); (2) two processes for preparing O-dodecanoyl citric anhydride acid halides of formula V. R1C11H23; R2halo.
