The device has a knife holder (30) with a frame (31), and a movable base plate (20) covered by an emery cloth (22). A cover is placed on a base (10), and slots (15) are provided on sides of the cover to insert an angular adjustment plate (16) to fix a knife sharpening angle. A roller (34) is provided on an axial base (33) extending from the frame such that the holder is rolled in back/forth motion on the base plate to sharpen a blade against the cloth. The relation between the holder, knife (40) and adjustment plate is adjusted based on a trigonometric function to adjust the angle.
