PPROBLEM TO BE SOLVED: To provide a food improved in juiciness, texture and food taste of animal protein. PSOLUTION: This softening method of the animal protein comprises impregnating 100 pts.wt. of animal protein with a mixed solution obtained by mixing 3-12 pts.wt. of saline solution and 1-10 pts.wt. of alkaline chemical solution with 0.001-0.1 pt.wt. of pulverized enzyme powder so as to give the animal protein a salt dissolving gelling function and cause enzyme reaction therein. The food comprising the animal protein softened using the softening method is also provided. A softening agent comprises salt powder having concentration through dissolving in proper solvent, alkaline chemical solution, and enzyme powder. Especially, the enzyme powder comprises one kind either of protease or amylase, or their mixture. As protease, papain, actinidine, and cucumisin are desirable. PCOPYRIGHT: (C)2008,JPO&INPIT
