PPROBLEM TO BE SOLVED: To provide a buckwheat beverage richly containing rutin derived from leaves or stalks of an ordinary kind of buckwheat and readily taken at any time, a method for producing buckwheat extract to be added to the buckwheat beverage, and a method for producing raw material for the buckwheat beverage. PSOLUTION: The method for producing buckwheat extract comprises a cutting process S6 where the leaves and stalks of the ordinary kind of buckwheat are cut each into a length of 3-5 mm, a drying process S7 where the cut leaves and stalks of the buckwheat are dried so as to have moisture content of 7-8 pts.wt., a roasting process S8 where the dried buckwheat leaves and stalks are roasted, and an extraction process S9 where the buckwheat extract is extracted from the leaves and stalks of the roasted buckwheat with boiling water at 95C.
