PROBLEM TO BE SOLVED: To provide a method for producing Mitarashi dumplings (skewered dumplings with salted and sweetened mop sauce) corresponding to diversification in preference, applicable to long preservation, reduced in aging and hardening and also having soft palate feeling, and to provide a method for producing Mitarashi dumpling.;SOLUTION: The method for producing Mitarashi dumpling comprises the following process: a process of wrapping ingredients with dough to make dumplings; a process of skewering a plurality of the dumplings; and a process of applying mop sauce to the skewered dumplings. Another version of the method for producing Mitarashi dumplings comprises the following processes: a process of mixing raw material starch obtained by adding egg shell mainly to starch, powder sugar, water and additives together to prepare the dough; a process of kneading the mixture under a prescribed steam pressure to prepare the dough; a process of mixing the powder sugar, mainly starch, water and additives to make mop sauce; a process of adding mirin and soy sauce to the mixture and stirring the mixture while heating to make the mop sauce; a process of wrapping the ingredients with the prepared dough to make dumplings; a process of skewering a plurality of dumplings; and a process of applying the mop sauce to the skewered dumplings.;COPYRIGHT: (C)2008,JPO&INPIT
