PROBLEM TO BE SOLVED: To provide a method for producing Inari-zushi (flavored cooked rice wrapped up with fried bean curd) by which sushi rice can be smoothly charged into the inner part of a fried bean curd exhaustively up to its both back-side corner parts without damaging the fried bean curd so as to be improved in yield of continuous operation.;SOLUTION: The method for producing Inari-zushi comprises the following steps: a step of maintaining the cut part of a fried bean curd Q open; a step of setting a pressing member 16 whose tip end center is formed into a protruding shape 16a and whose both sides are formed into releasing faces 16b at the front face side of the fried bean curd Q; a step of pressing sushi rice P into the inner part of the fried bean curd Q through its opening part via a movable sushi rice extruding mechanism 9 while the sushi rice P is formed so as to shape its front face center in a travelling direction into a recessed part and its recessed part both sides into a protruding part; a step of making the sushi rice P pressed into the fried bean curd Q come in contact to the back part inner face of the fried bean curd Q and simultaneously pressing the back part outer face of the fried bean curd Q by the pressing member 16; and a step of forcedly pressing the sushi rice P into both corner parts at the back side of the inner part of the fried bean curd Q through dispersing the cooked rice at the center side to both sides.;COPYRIGHT: (C)2008,JPO&INPIT
