PROBLEM TO BE SOLVED: To obtain noodles capable of exhibiting excellent appearance, preservability, color tone, texture and flavor while suppressing specks or generation of mold for a long time, and preventing mutual adhering of noodles by adding a specific fermenting seed. ;SOLUTION: The objective noodles contain (A) a fruit fermenting seed such as a dry fruit fermenting seed (concretely, a raising fermenting seed, dried prune fermenting seed, or the like), a grape fermenting seed or an apple fermenting seed or (B) a fermenting seed (e.g. the one obtained by adding a fruit, a beer, crops or sugars to an exemplified fermenting seed of the component (A) obtained by using the component A as an original seed preferably n an amount of 0.1-45 wt.% based on the total amount of crop flour raw material for noodle making.;COPYRIGHT: (C)1999,JPO
