It is intended to provide an extraction method capable of extracting a target substance selectively and effectively from a matter to be treated without resort to a multi-stage extraction process, and an extraction apparatus. The method for extracting a target substance of the invention comprises the steps of: bringing a high-pressure fluid mixture obtained by mixing a hydrophilic fluid component with a hydrophilic fluid component in a supercritical or subcritical state over their solubilities into contact with a solid matter to be treated containing a target substance, and extracting the target substance contained in the matter to be treated into at least either of the hydrophilic fluid component and the hydrophobic fluid component; fractionating the high-pressure fluid mixture into a fraction mainly containing the hydrophilic fluid component and a fraction mainly containing the hydrophobic fluid component; and isolating the target substance from at least one of the fractions.
