The present invention relates to a simple, cheap and environment-friendly method of isolating chitin-glucan complex from fungal mycelia by autolysis and enzymatic hydrolysis wherein the mycelium autolysis takes place at mycelium dry matter concentration in the range of 1 to 20 percent by weight, at a temperature ranging from 30 to 60 degC, at pH value ranging from 4 to 9, for a period of 5 hours up to 2 weeks, where in the course thereof an enzymatic hydrolysis takes place. Subsequently, after finish of the enzymatic hydrolysis, insoluble portion containing chitin-glucan complex is isolated for further processing. The obtained complex contains valuable substances for further use in food industry, medicine and cosmetics.
