The invention relates to an olive separation machine designed for olive pasta and olive oil production. It is composed of the external tight vat 1, the support base 30, the external perforated cylinder 5 conducting olive kernels to the exit 4 and allowing the passage of the olive pasta through its holes 9. The invention is also provided with an internal impeller 8 with adjustable blades thereon 15 which blades -with regard to the variety of the olive fruit (size of the kernel)-leave a void space 16 and conduct the olive fruit inside the perorated cylinder.
