An improved process for the preparation of hydroxylated lecithin from crude soybean lecithin by hydroxylating crude soybean lecithin by using 30% hydrogen peroxide in the range of 1-4 w% of lecithin and 75% lactic acid in the range 12-18 w% of lecithin at a temperature ranging between 50 to 70°C at microwave power of 300 to 600W for a period of 5-60 min to obtain hydroxylated lecithin.
