The present invention describes a process for obtaining a nopal extract for manufacturing food products, which consists in diluting nopal juice mucilage using sodium bicarbonate, water-diluted salt and 60 ml of vinegar, said ingredients being uniformly stirred for 3 min to 5 min, so that the bicarbonate is completely dissolved and a sufficient amount of foam is generated for ensuring an excellent dilution. Once the homogenization is achieved the mixture is allowed to stand for 30 min so that said ingredients act within the mucilage dilution. The aforementioned process is performed in 40 L containers. The invention also comprises a method for manufacturing a food product, which consists in mixing the nopal extract together with a predetermined amount of food flour, where this latter element is obtained from the cereal or grain flour groups or from the leguminous seed group, or the combination thereof. The invention further includes nopal extract as well as food products manufactured ou t with the extract obtained by the aforementioned methods.
