A method of preparing Kimchi by mixing bean extract, bean sprout extract or Phellinus linteus extract with Kimchi seasonings is provided to obtain Kimchi having the nutrients of beans and bean sprouts or the efficacy of Phellinus linteus. Bean extract is mixed Kimchi seasonings. Cabbage is salted, dehydrated and mixed with the obtained Kimchi seasonings. In the process for preparing Kimchi, bean sprout extract and Phellinus linteus extract can be used instead of the bean extract.
