A preparation method of aged garlic using a garlic aging room is provided to prevent the garlic from being dried in aging processes. A preparation method of aged garlic using a garlic aging room comprises the steps of: (a) putting garlic(13) in a plurality of airtight aging-containers(12), closing each cover, mounting the containers on a plurality of aging rack-carts(11), and moving the aging rack-carts into the garlic aging room; (b) firstly aging the garlic at a first temperature value preset in a first temperature range for a first time preset in a first time range; (c) secondly aging the garlic at a second temperature value preset in a second temperature range for a second time preset in a second time range; (d) thirdly aging the garlic at a third temperature value preset in a third temperature range for a third time preset in a third time range; and (e) taking the plurality of aging rack-carts out of the garlic aging room, opening each cover of the plurality of airtight aging-containers, and then drying the garlic at room temperature for a forth time preset in a forth time range.
