Producing fragrance and/or aroma substances (I), comprising reactions induced by microorganisms and/or enzymes in a liquid phase in a bioreactor, followed by continuous or sequential isolation of (I) from the liquid phase in an evaporation unit, is new. Recycling of the retentate, depleted in (I), to the bioreactor, is carried out at over 25 degrees C, using thermo-stable microorganisms and/or enzymes.
