Production of fenugreek oil (I), useful in cosmetology, dietetics and dermatology, comprises dehulling and crushing to isolate the cotyledon fraction and the lipid-rich embryo, extracting with solvent by flaking, by crushing, by removal of solvent using supercritical fluid, purifying and neutralizing, washing, decoloring, filtering, deodorizing. Production of an oil (I) from fenugreek (having a high content of polyunsaturated fatty acids of 1:2 percentage ratio of linoleic acid and alpha-linolenic acid compared to the total sterols and tocopherols present in (I)), useful in cosmetology, dietetics and dermatology, comprises: (a) dehulling and crushing of fenugreek seed to isolate from it the cotyledon fraction and the lipid-rich embryo; (b) extracting the oil with solvent while gradually flaking the seeds by crushing between cylinders whose spacing is below 1 mm, by removal of solvent by warming below 110[deg]C (where the temperature is maintained at a level of 70-90[deg]C under normal atmospheric pressure (1013 mB), below 70[deg]C under partial vacuum, 20-60[deg]C under cold pressurized conditions or 60-80[deg]C under hot pressurized conditions); or extracting by supercritical fluid; (c) purifying by demucilagination with acid followed by alkaline neutralization, by washing with addition of water at 5-20% of oil; and (d) decoloring, filtering and deodorizing. An independent claim is included for an oil (Ia) comprising over 50% (preferably over 64%) of polyunsaturated fatty acids (1:2 percentage ratio of omega-6 linoleic acid and omega-3 alpha-linolenic acid), over 1% total sterols and over 0.5% tocopherol.
